Tonight’s dinner.
Chicken Stir-fry. Chicken, carrots, green beans, zucchini, mushrooms, spinach, shallots, garlic and scallions to garnish. :)

Shrimp Tacos in lettuce.
Ingredients: Fresh Shrimp (from Thailand), red bell pepper, tomato, shallots, garlic, cilantro, s & p. In a romain lettuce leaf. :D
Oh and fat free sour cream. :D

DAY 41 Lunch!
Spinach salad with red onion, avocado, tomato, part skim mozzarella, Canadian bacon and homemade vinaigrette (evoo, red vinegar, grainy mustard, s&p).
Iced Coffee made with Trader Joes Soy Vanilla milk. :)
So refreshing! You see that sun coming in through my window? Beautiful right? :D
Day 42 Dinner.
Chicken thighs baked with tomato, garlic, onion, s&p, grated parmesan and I poured a tiny bit of honey on it. On top of some lightly cooked spinach.
:) It was really good.
DAY 49 Dinner
Chili rubbed tilapia sided with butternut squash with browned butter and thyme.
YUMMY!!! I am kind of in love with squash! :)
